Amazing Breakfast Egg Bites – Starbucks Copycat

These high-protein, low-carb breakfast egg bites are perfect for on-the go mornings, for a healthy and fulfilling breakfast. The faux sous vide style keeps them moist and creamy, and is a great way to use excess eggs and garden veggies. These are very similar to the popular egg bites available at Starbucks.

What Fillings Can I Use?

What I love about these egg bites is you can fill them with whatever ingredients you have on hand. You might go for a classic bacon and cheese filling, or spinach, peppers, onions for a vegetarian take. You can use any type of cheese – I used Gruyere to make these more of a copy-cat style. This recipe would work great with feta, cheddar or any shredded cheese blend.

Tip for Cooking Bacon

To cook bacon quickly with the least mess I usually cook it in the microwave between some paper towels. You can fold the bacon strips in half and they cook evenly and are easier to manage.

What Type of Pan Should I use?

You can make these in a traditional metal muffin pan, but I opted for a silicone tray to make them easier to remove without needing cupcake liners and make clean up a breeze.

These Silicone Muffin Pans from Amazon are dishwasher safe and BPA free. They also have a metal reinforced rim to make them studier when carrying.

What Is Sous Vide Style?

Sous Vide is a French method of cooking which typically places food in a plastic pouch or glass jar which is submerged in a water bath and cooked at a lower constant temperature. Doing so keeps food moist and tender. For these egg bites, we leverage the use of the water bath to allow even cooking and humidity. We place the muffin plan on a regular cookie sheet, filled with hot water. I cook these egg bites at 350F to prevent burning and drying out.

These eggs bits are so versitile – you can make a meal out of them or have them as a quick snack.

Do These Use A Lot Of Eggs?

For a dozen eggs bites I used 8 eggs, so these are a great way to use up any excess eggs you have. These could be made with egg whites but they may not come out as creamy. I used my beautiful brown eggs from my chickens.

Copycat Starbucks Breakfast Egg Bites

Tasty and healthy high-protein, low-carb egg bites.

Cook Time 25 minutes

Ingredients
  

  • 8 eggs
  • 1/2 cup cottage cheese
  • 1/2 shredded cheese your preference
  • Optional Add ins – Bacon Spinach, Peppers, Green Onions
  • 1 tbsp Cornstarch
  • Salt and Pepper

Equipment

  • Blender
  • Oven

Method
 

  1. Preheat your oven to 350F.
  2. Prepare any add ins that require cooking such as bacon, sausage, turkey bacon etc. I cook bacon between paper towels in the microwave for 4-5 minutes until crispy.
  3. Chop any vegetables into small pieces such as spinach, peppers, green onions.
  4. Grate or crumble cheese.
  5. Crack eggs into food processer.
  6. Add in cottage cheese, grated cheese, cornstarch and salt and pepper.
  7. Blend on high until combined.
  8. Place your muffin plan on a sheet pan.
  9. Evenly distribute your add ins into each cell of the muffin pan.
  10. Pour the egg mixture over the add ins until 3/4 full.
  11. Place the cookie sheet with the muffin pan into your preheated oven.
  12. Carefully pour boiling water into the cookie sheet until the muffin pan is submersed about halfway.
  13. Bake for 25 minutes.
  14. Carefully remove the muffin pan from the cookie sheet.
  15. Allow to cool before removing the egg bites from the pan.
